Katrine is a biologist and ranger at Esrum Abbey in North Zealand. Surrounded by beautiful forests, meadows, and creeks, the abbey’s landscape also has cultural relevance. In her teaching about wild food focuses on medieval times, and how the local monks used herbs and plants – both those found in the wild and the medicinal herbs, fruits, and vegetables grown in the abbey’s gardens. After foraging in the woods and fields around the abbey, the wild herbs are cooked according to medieval precepts over an open fire, through curing, or served in their natural state: fresh and full of flavor.
