Sweet cicely sugar
- 500 g organic sugar
- 200 g sweet cicely (or spruce)
- 2 g salt
- Blender
- Preservation jar
- Put sweet cicely, sugar, and salt in a blender, and blend until the whole mixture is green.
- Pour the sugar in a preservation jar.
- The sugar keeps for up to a year.
Tips
Use this sugar to add a touch of aromatic sweetness to other dishes. It also goes well in oatmeal or porridge with apple slices on top.

Thorsten Schmidt is a Danish chef known for his sense of culinary adventure and love for experimentation.
