Helle-Marie is a trained biologist and ranger, and has been the head of the Nature Center of Randers since 1994. She has taught about cooking in the wild, over a bonfire, or with camp stoves for many years. Randers’ nature center is situated by the Gudenå, in an area of great natural beauty, and Helle-Marie forages plants from the area to cook in green dishes.
